Ingredients
  1. 1/2 cup red onion, chopped (about 1/2 onion)
  2. 1 Tbl. olive oil
  3. 3 cloves of garlic, minced
  4. 1 pack vegan faux-chicken - about 12 oz., roughly chopped (we used Beyond Meat)
  5. 2 8 oz. tubes Crescent-style rolls (original or low fat)
  6. 1/3 cup buffalo sauce (many brands are vegan, check for butter)
  7. 1 Tbl. vegan Worcestershire sauce (we used Annie's, but Wizard is good too)
  8. 1 cup vegan cheddar shreds (we used Daiya)
  9. 1/4 cup each, chopped fresh parsley and green onions, to garnish
Instructions
  1. Preheat oven to 375.
  2. Over low heat, saute onions in olive oil about 2-3 minutes until soft. Add vegan faux-chicken and garlic. Cook another 3 to 5 minutes until veggies are browned and faux-chicken is toasted at edges. Set aside.
  3. Line two baking sheets with parchment or silicone baking mats. Pop open Crescent cans and spread each set of triangles into a rectangle shape, overlapping the seams to seal them. You should end up with four rectangles of dough on each baking sheet.
  4. Combine buffalo sauce and Worcestershire. If a spicier flavor is desired, add a splash or two of your favorite hot sauce or some red pepper flakes.
  5. Using a pastry brush or spoon, spread buffalo mix across the surface of the dough. Next, sprinkle 1/8 cup vegan cheddar shreds on each rectangle and top with the onion, garlic, faux chicken saute.
  6. Carefully roll up each piece of dough and pinch ends to close. Slice in half and place upright on the baking sheet. (They will look like cinnamon rolls waiting to be baked!) Repeat until there are 16 pinwheels on two baking sheets.
  7. Bake for 12-15 minutes, until edges are crisp and browned.
  8. To serve, sprinkle with chopped fresh parsley and green onions.
Notes
  1. Really, anything you make with Crescent-style roll dough tastes buttery and comforting. But who would have guessed that several brands of Crescent rolls are vegan?? They are! Trader Joe's, Pillsbury and Wegman's all make "accidentally" vegan Crescent roll dough. Just be sure to read labels and check for dairy or eggs.
  2. With faux chicken, Beyond Meat is the favorite in our household both for its taste and environmental policies, but check out your local grocery to see what is available where you live. Gardein, Light Life, Yves, Match, Boca, Trader Joe's, Wegman's and MorningStar Farms all make tasty faux chicken options and are easy to find at supermarkets. With vegan cheeses, the important factors are taste and melting point. We've found Daiya tastes and melts well enough that cheese-eaters don't even notice the difference! Other brands of vegan cheddar shreds you may see are Follow Your Heart and Galaxy.
